Before relocating to Orlando in 1994, Lazo attended the University of Puerto Rico's Humacao campus to study electronics. He was on vacation in central Florida, but after finding a job as a dishwasher at Disney, he never went back to Puerto Rico. But after a chef asked her if she wanted to learn to cook, her career at the company really took off.

She first worked as a pizza maker before training as a chef and pastry chef, which allowed her to represent the business in nations like China and Japan. She also worked at Epcot and Disney's Boardwalk Resort at Walt Disney World, where she revamped all of the restaurant's desserts.
